This blog is the result of having many friends and acquaintances ask me over the last 18 years of living a vegan life what I eat and what I feed my family. Twenty years ago I turned to a vegetarian diet, but after reading more and more literature about diet and health, I went vegan. The books that I have found the most convincing for a vegan diet are The China Study, by Colin T. Campbell and Eat Right, Live Longer, by Neal Barnard, M.D. Both of these authors have been most influential to me and have many books that are fantastic and can answer any question about the health and nutrition of a vegan diet. Recently a documentary about The China Study has been made called Forks Over Knives, and it is currently on netflix. I recommend this to everyone that is interested in nutrition. I have a family with four children that have been raised vegan, ages 19, 16, 14, and 11, and a supportive husband that love vegan food! I try to make vegan food that is made from whole food, with as little refined ingredients as possible. That means no refined sugar or refined flours for baking which means that I find a recipe that I like and then alter it to make it more healthy. I am always aiming for meals that are low on the glycemic index. Once in a while I include a recipe that is not healthy just for a treat too. I am excited to share some great recipes and explore vegan restaurant options in and around Utah for anyone that wants to improve their health and the way they feel every day.

    Tried the sweet potato and kale pizza tonight and loved it! (Okay, not Rob yet. But I’m working on him.) Thanks for taking time to share your recipes and for giving me encouragement when we talked yesterday (at the track meet) on our vegan attempts!
